Hi,
I make open fermented ales for cask conditioning but I don't drink them all in a couple of weeks (partly because I have no visitors now during lock-down!) Cask ale changes flavor over weeks, so I was wondering if I could store the wort from a brew day and only ferment a portion of it at a time. How should I store the wort? I have some good sanitized options (sanitized buckets in a temperature controlled chest freezer). Or should I only make the amount of wort that I expect to ferment and not bother trying to store any?
