Special Instructions
- mash all but acidulated malt @152 for 30 minutes in 3 gallons strike water
- add acidulated malt ,mash 30 more minutes.
- sparge to kettle to preboil volume
- boil for 15 minutes ,add lime zest, whirlfloc tablet .do NOT add hops yet.
- chill to 95*F and add half the container of Goodbellys lactobacillus planarum(in this case Pomegranate/Blackberry,8 oz)
- cover kettle ,seal with saran wrap and allow to sour for 24-48 hours or preferred level of sour
- return to boil (15 minutes) add Hops ,chill and pitch US-05 allow to ferment 3 - 4 days under closed fermentation
- add blackberries and lime juice , allow fermentation to finish ,then package .
