Just putting together something for the winter. Loved Hook Norton when we were there and have drawn from a few places to sketch out something of Twelve Days Clone.
I'm mashing at 156, with the crystals at 11% and the dark inverts, so you see where I'm going. Hoping the late Northdown will lend some of what I remember from it - an almost uncanny baked, dark plum thing. At any rate, I use 1469 on everything now, but would love to go back and explore some yeasts I cannot recall much about, or try something new, that would do well with this kind of a richer, sweeter dark ale. Not much recall on either White Labs or Wyeast, save Wyeast's 1968. Know nothing about Omega or Imperial, even less, if that's possible, on the world of dry yeasts.
