What to do with overly large Zucchini?

Wifey makes a really good zucchini stew. We use it on the big ones that get the hard skin syndrome. She literally just made a batch yesterday. Tomato based with corn, onion, ground beef, banana peppers.

That sounds good. We usually wait until the cool weather to make soups and stews. Once in a while I'll make a special soup if the family really wants it.

If you have a recipe for that stew, I'll gladly try it here.
 
I'll get it off the boss.

Here:

2# of ground beef
1 large onion chopped
1 v.large (or 3 or 4 med.) Zucchini chopped
1 cup frozen corn or fresh corn off cob
3 banana peppers chopped
2 14.5oz cans of stewed tomatoes with Italian seasonings
1 28oz can of tomato sauce(use can to add 2 cans
of water as well)
2x 1/2 tsp garlic salt
1/2 tsp each oregano and basil
Red pepper flakes to taste, depending on banana peppers strength

In large stew pot,

Lightly brown g.beef with onions and banana peppers

Drain grease.

Add 1/2 tsp garlic salt and stir well.

Add tomatoe sauce, 2 cans of water, and 2 cans of stewed tomatoes. Add 1/2 tsp garlic salt and Italian seasonings to sauce.

Cook sauce with meat mixture for 1 hour.

Add zucchini and cook for 20 minutes and add corn and cook for 10 more minutes.
