    Fermenting in stainless steel?

    ss fine but dont ferment wine in plastic it can take a lifetime to get the stain/ aromas out especially depedning on the must. black berry must ruined my ale pale. its now a blackberry wine pale. lol

    Newb scorches LME

    yes remove from heat dont add it all in the begining go for a late addition. dont add it all in the middle of the pot i like to add it evenly around the kettle. then stir like crazy with teflon or wooden spoon making sure to get the whole bottom of the kettle with the spoon.

    Powdered Cream cheese in mead.

    take the package of powdered cream cheese and place it on a smoker for 10 - 12 hours until the edges are burnt dark. then throw it in the garbage and make mead without powdered freakin cream cheese. sorry i just dont get all the stuff you guys add to mead.
