What do you do while waiting for mead to be ready to drik to keep from drinking it too early?

Let the mead do it's thing for 6 mos to a year (plus). You'll be glad you waited. Trust me.

I still have a bottle of Barkshack Ginger Mead that's over 13 years old. I think I'll crack it on the day I retire...or at my retirement party...in 3 years...
 
My mead is at least four years old. I drink one every six months or so, so the last bottle will be well over a decade old when I drink it.
 
No, It's not my first mead, just 4th or 5th. I have a bad habit of getting impatient. I Just Get So EXCITED! about a month or two in temptation gets the better of me.

Yet brew something that takes a REALLY long time to mature... Heck you won't know which way to turn! ;)
