6lbs Munich 10
4lbs Pilsner
12oz Crystal 80
8oz Carapils
*1lb Carafa I
*cold steeped in 1 gallon of water overnight then added to boil pot with 10mins left of boil time.
Mash:
saccharine rest: 5.o gal water at 154degF for 60mins
batch sparge #1: 2.5gal water at 168degF for 10mins
batch sparge #2: 2.0gal water at 168degF for 10mins
Hops:
1oz Hallertau(ibu 4.2) 60mins
1oz Hallertau(ibu 4.2) 20mins
Yeast:
White Labs WLP802
Checz Bujevich Lager Yeast with 1.2 liter starter
Fermentation:
Primary: 3-4 weeks at 52deg F
Rack to carboy
Secondary: 2-3 weeks at 55degF
Diacetyl Rest: 2-3 days at 68degF
Bottle and lager: store at 33degF for 3-4 weeks
This has been one of the best beers I have made yet! malt forward and a little Munich sweetness on the front end. Clean and crisp in the middle. A little nutty on the back end with hints of toffee, coffee bitterness, and noble hop flavor.
