Spur of the moment, decided to do a graf with what I had on hand:
1/2# honey malt steeped 20 minutes at 156°F in 1 gallon water
1/2 ounce Galaxy 16.4% for 10 minutes
2# Briess wheat dme
3 gallons apple juice plus water to 4 gallons
Lallamand Abaye yeast pitched at 73°F, ambient 65°F. OG 1.062
We'll see what the Galaxy does. Hopefully not too bitter.
