    DME Hardening

    Rubber band around the bag it comes in and then toss in a zip lock baggy and into my cupboard. I don't put much effort into preserving the DME, and have never had any issues with clumping or hardening.

    Yea I wouldn't expect less than 1.010. Also, for what it's worth, most professional breweries will let a beer ferment until they get the same gravity reading 2 days in a row. You don't wanna rush those little guys. I say give em a couple days to clean up any off flavors they may have left...

    I've made kombucha a few times, but never with a kit. I've always just bought a bottle from Whole Foods and grew my own scoby. I guess if this batch doesn't work out, I'd just dump in a bottle of booch and keep waiting.
