I just bought this setup from member volshersheers a couple of months ago. Long story short, after a close friend of my wife and I encountered serious health issues since then, we've decided to focus on some healthier habits for now, and unfortunately brewing doesn't lend itself to that for me...
Would using a coil (stainless or copper) mounted to a lid be able to work as both an HERMs coil and then moved to brew kettle as immersion chiller? If so, pros/cons?

Your points on the reduced time and cleaning efforts are probably the most compelling reason for me to consider single vessel.
Obviously, the length of each person's brew day is as much or more dependent on their own processes as system setup, but...

Long time BeerSmith user as well but after going through a good part of the BrewFather documentation, I'll have to give it a go. It appears to have a very clean and intuitive interface.
